Easy Diabetic Breakfast - Tofu Smoothie

If your heart is tainted by a deep hatred of soy like my boyfriend's, feel free to pass up this tofu smoothie. For those of you who like drinking soy milk and using tofu in cooking, however, there's a 98% chance you would love this diabetic recipe. It is low-carb, low-calorie, high-protein, and rich with antioxidants. What a great way to start a day, right?

Diabetic Breakfast - Tofu Smoothie Recipe

Ingredients (for 1 serving)

  • 1 cup soft tofu
  • 1 cup frozen strawberries with no added sugar
  • 1/2 cup chilled green tea with no added sugar
  • 1 tsp. vanilla extract
  • 1 tbsp. sugar-free syrup

Preparation - Put all the ingredients in an electric blender and process until smooth.

Notes - Add more sugar-free syrup if you want your breakfast smoothie sweeter. Moreover, you can create your own version of tofu smoothie simply by replacing strawberries with other fruits or adding flavored syrup. Last but not least, you should consider your body size and weight when it comes to the serving portion. I am a small woman so this serving size is quite enough to keep me full and energized for a few hours. If Shaquil O'Neil wanted to put this on his breakfast menu, however, he would need a much larger serving portion.

Tofu Smoothie - Nutrition Facts

  • One cup of tofu contains approximately 8 g of protein, which is about 2 g more than the amount of protein in a medium-size egg. So drinking a cup of this tofu smoothie in the morning is like having one large egg, a handful of fruits and a little cup of green tea for breakfast.
  • Tofu is much lower in calorie and fat than meat products. Plus, many studies have found that regular consumption of tofu tends to lower the cholesterol levels and risk of heart disease. As diabetics are more susceptible to heart problems, adding tofu to their diet is a smart move.
  • Tofu is a good source of iron and copper, two nutrients that play an important role in hemoglobin synthesis. They help transport more oxygen throughout the body and accordingly make you feel more energized. So don't say this diet breakfast won't give you energy to do anything.
  • Both strawberries and green tea are loaded with antioxidants. Together they are a powerful "antioxidant team" that can prevent many types of cancer as well as promote your overall health. Also, according to many scientific studies, green tea can help diabetics improve their blood sugar control. Thus, putting these two ingredients in your tofu smoothie is like adding potent tonics to your breakfast.

My Diabetic (II) breakfast for the last 5 years has been a handful of non sugar dry cereal, fresh cuts of in season fruits, 2 scoops of low fat cottage cheese and a scoop of low fat DIET Yogurt. Great taste, no sugar rise and no need for anything else. Very satisfying. Add prunes if needed. David Russell PS Just thought. It could have been a smoothie.

What is it with men and tofu? Bob can 'smell' tofu a mile away no matter how I try and disguise it! Maybe they think it's not manly!
