How Fasta Pasta Works

Fresh Pasta Vs. Dried Pasta

  • Fresh pasta contains eggs and additional water, therefore it is more tender and takes less time to cook than dried pasta.
  • Fresh pasta has a more delicate texture and should be served with light sauce whereas dried pasta's firm texture is good with thicker sauce.

Have too much time? Make your own fresh pasta instead of buying dried pasta from a supermarket!

Green Pasta Recipe

A superb vegetable dish! This recipe may have a lenghty list of ingredients, but it actually takes only about 20 minutes to prepare. The hearty spinach pesto goes really well with the crunchy raw vegetables.

Ingredients

For Pasta

  • 8 ounces spinach, coarsely chopped
  • 10 ounces dried spinach noodles
  • 1 small red onion, finely chopped
  • 1 cup radishes, thinly sliced
  • Salt and pepper
  • Spinach Pesto

For Spinach Pesto

  • 1 clove garlic
  • 1 cup spinach
  • 1/4 cup pine nuts
  • 1 cup plain yogurt
  • 1 cup grated Romano cheese
  • 1/4 cup olive oil

Preparation

  • Put all the ingredients for spinach pesto in a food processor or blender. Whirl until smooth and set aside.
  • Boil pasta until tender. Drain and put in a large bowl.
  • Add spinach pesto, onion, radishes and fresh spinach.
  • Mix together.
  • Season wth salt and pepper.

Vegetarian Macaroni and Cheese Recipe

Mac and cheese with vegetables sounds a bit odd, huh? But why not? I actually was not going to include this recipe in this article because the cheesy sauce may not be ideal for people who look for low calorie recipes. But what the heck...It tastes so good!

Ingredients

  • 1 1/2 cups elbow macaroni
  • 1 tbsp butter
  • 1 onion, finely chopped
  • 1/4 cup all purpose flour
  • 3 cups shredded Cheddar cheese
  • 1 cup milk
  • 1 cup vegetable broth
  • 1 tbsp Dijon mustard
  • 4 cups finely chopped broccoli (only the flowers)
  • 2 cups finely chopped cauliflower (only the flowers)
  • Salt and pepper
  • Paprika

Preparation

  • Boil macaroni until tender.
  • Meanwhile, boil broccoli and cauliflower in another saucepan until tender.
  • Drain both the macaroni and vegetables. Set aside.
  • Melt butter in a frying pan over medium-high heat.
  • Add onion and cook for about 5 minutes.
  • Add milk and broth.
  • When the mixture comes to a boil, add flour and stir well.
  • Reduce heat to low. Add mustard and cheese.
  • Cook until cheese is melted.
  • Pour the sauce over pasta and vegetables.
  • Season with salt and pepper, and dust with paprika.

Great hub page. I would only point out that white, bleached pastas are simple carbohydrates, which are converted to sugars and stored as fat in the body; while whole wheat pastas are complex carbs, which can efficiently be used by the body as fuel. So I'd recommend whole wheat pasta in any of the recipes you've suggested.

You're absolutely right, Irowley. Thanks for your helpful comment :-) I actually enjoy whole wheat pasta myself. Some people say it tastes bad, but I think it doesn't taste much different from white pasta. Just a little denser in texture, maybe.

I agree with the whole wheat pasta choice.

I am a huge garlic fan, and usually double whatever is recommended in any recipe =)) ...that being said, I love your vegetarian spaghetti recipe...delicious and easy to prepare!

Lynn, thanks for stopping by and commenting :)

The spinach pesto sounds delicious. I typically prefer whole wheat pasta, but sometimes white pasta is the only thing that hits the spot.

WOW, I just tried your bow tie pasta recipe, although I had to tweak it a bit since I only had ingredients that were close lol. I had to use dried basil and fire roasted garlic diced tomatoes, and penne pasta instead of bow ties. But let me just say, my substitution recipe was amazing. Quick and easy and I can only imagine how good the fresh version might taste considering mine was out of this world! THANK YOU!!

@Daughter Of Maat - That's great! I'm so glad you have tried and enjoyed the recipe. :)

Hi Om,

These all sound absolutely delicious. I also like whole wheat pasta although it is sometime hard to find all of the shapes of pasta in whole wheat versions. The only thing that I would have to skip in that last recipe is the cauliflower because my husband does not like it. He likes broccoli but not cauliflower. Go figure?

Thanks! Up and useful votes and will share with my followers.

Thanks, Peggy. So he will eat broccoli but not its cousin, huh? That's so funny. :)

How many servings do these recipes make?

Om Paramapoonya 5 weeks ago

About 2 - 3 servings. :)
