See this burger? If you really want to lose weight and get slim, say goodbye to it! Here are some low calorie vegetarian sandwiches to add to your lunch menu. They are very tasty, healthy and as filling as a burger. You can lose weight without having to eat less. How cool is that?

For those of you who have never had vegetarian food, I really encourage you to try it. The idea that vegetarian dishes are bland and boring is just a false belief. Plus, vegetarian cooking is quite easy. You don't have to be much of a cook to be able to prepare a yummy vegetarian meal.

Tomato-Spinach Roll Recipe

This is my favorite vegetarian sandwich. It takes just about 10 minutes to prepare. You can make a bunch of these sanwiches easily in less than half an hour. Perfect for a little party or picnic. To make this low calorie lunch even heartier, use whole wheat tortillas and light cream cheese instead of regular ones.

Ingredients (for 6 rolls)

  • 10 oz. Spinach, coarsely chopped
  • 8 oz. Light cream cheese
  • 2 tbsps prepared horseradish
  • ¼ cups diced tomatoes
  • salt and pepper
  • 6 whole wheat tortillas (7-inch diameter)

Preparation

  • Mix together spinach, cream cheese, horseradish, tomatoes, and dash of salt and pepper in a large bowl.
  • Spread the mixture on six tortillas.
  • Roll each tortilla tightly.
  • Cut each roll into 3 or 4 slices.

If you don't want to eat them right away, you can wrap them in cellophane and keep them refrigerated for up to a day.

Zucchini-Mushroom Sandwich Recipe

This open-faced sandwich owes its tastiness to the lightly roasted vegetables. To make it a perfect meal, have this superb vegetarian sandwich with a cup of low calorie soup.

Ingredients (for 6 sandwiches)

  • 1 large onion, coarsely sliced
  • 1 lb zucchini, sliced lengthwise into thin pieces
  • 1 lb mushrooms, thinly sliced
  • 2 tbsps olive oil
  • 2 tbsps red wine vinegar
  • 6 lettuce leaves
  • 6 slices whole wheat bread
  • salt and pepper

Preparation

  • Cover the bottoms of two baking pans with foil. Brush lightly with some of the olive oil.
  • Put onion and zucchini slices in one baking pan. Arrange nicely. Let them overlap just a little.
  • Brush onion and zucchini slices with a little more olive oil and sprinkle vinegar over them.
  • Put the mushroom slices in the other baking pan and brush with the rest of the olive oil.
  • Bake both of them in a 475º oven for 30 - 40 minutes or until the vegetables turn lightly brown.
  • Remove from oven.
  • Mix the roasted vegetables together and season with salt and pepper.
  • Place a lettuce leaf on each bread slice.
  • Spread the vegetable mixture on the bread slices.

Chile French-Toast Sandwich Recipe

You may wonder how we can reduce calories in French toast. The answer is we can bake it instead of pan frying. This way we can both reduce the amount of fat and make it easier to clean up. To spice up this vegetarian recipe, serve these French toast sandwiches with salsa.

Ingredients (for 4 sandwiches)

  • 4 oz. diced green chiles (1 can)
  • ½ cup minced cilantro
  • 4 eggs
  • 1 ½ cups low fat milk
  • 8 slices whole wheat French bread
  • 1 ½ cups shredded jack cheese

Preparation

  • Beat eggs and milk in a large bowl.
  • Dip 4 bread slices into the egg mixture. Make sure the mixture coats both sides of bread slices.
  • Put bread slices on a greased baking sheet.
  • Evenly top each slice with cheese, cilantro and chiles.
  • Dip the other 4 bread slices into the egg mixture. Put them on top of the slices in the baking sheet.
  • Bake in a 400º oven for about 10 - 12 minutes or until the sandwiches begin to turn brown.
  • Flip each sandwich carefully and bake for about another 10 minutes.
  • To spice them up a little, serve these vegetarian sandwiches with hot salsa.

mmmm....the tomato-spinach roll sounds really good...I'm going to try that one. I'm a big fan of healthy, but flavorful cooking. Adding the horseradish is what did it for me!!

Excellent suggestions... but I'll make mine without bread. Gluten is often the cause of extra size at the waist.

I use a nice big leaf of Romaine lettuce, and turn everything into a wrap!
